Linking to Excel Date Field Subtracts a Day

I have a SP document library that is made up of Excel spreadsheets which are forms filled in by users...all the same beginning file, just differences in the content. Until this can get migrated to a more proper database, the Excel spreadsheets act as the master data source for populating fields/columns added into the doc library using Excel named ranges and the equivalent column name in the doc library.

Works great so far as a temporary stage. However, I have a date field in Excel, which when brought into a SP date column has a day subtracted...i.e. 11/2/2014 in Excel (mm/dd/yyyy formated cell) and once the file is saved and checked-in...changes to 11/1/2014 in the SP column. If I change the SP column to a Text field (single line), I get the correct day, but get 05:00:00 AM appended to the date...'11/2/2014 05:00:00 AM'

So, a) any ideas as to why SP is subtracting a day when using a Date field in SP? b) I've tried a few things on the excel side, but why is SP appending the '5:00:00 AM' time in the text field? When using the Text field that has the time appended (and correct day), I've seen some other strange things such as '2014-08-06T23:00:00Z' in my date field in Excel...and that isn't the format of the cell.

A little long...but going crazy with this one...
